Bill the agreed planning package as one unit at the package price, naming the service level and wedding date. Extra hours the couple requested beyond the package are listed separately, priced by the hour, and a separately priced service such as rehearsal coordination is a single unit.
Vendor contracts the couple pays directly don't belong in these rows; the wedding planner invoicing guide linked below explains why, along with service levels and payment dates. If you enter a tax rate it covers the full subtotal, so check your state's rules first.
Worked example, based on the preview's sample rows: a partial planning package at 1 × $2,800.00, four hours beyond the package at 4 × $75.00 = $300.00, and rehearsal coordination at 1 × $400.00. They add up to $2,800.00 + $300.00 + $400.00 = $3,500.00 with no tax entered. Put in your own prices.
